A Low Stress Thanksgiving
Look, we all love stuffing our faces with excellent food on Thanksgiving, but not all of us like to cook. Even if we’re good cooks it can be stressful and the more dishes we need to have ready at the same time the harder the whole thing is. Then afterwards there’s the huge cleanup. So occasionally when we are having a small Thanksgiving (only three of us this year) we go full on lazy. It’s absolutely glorious.
This year’s feast was anchored by Peruvian rotisserie chickens we’d purchased the day before. For those who don’t live near a Peruvian chicken joint these birds are juicy and delicious AND come with multiple sides of your choice. So chickens, plantains, and green beans all cooked by someone else, and better than I can do it anyway. Add in Nothing But Bundt cakes for dessert and the only thing I had to cook was some acorn squash because the green beans come with tomatoes and I’m allergic to them. We put out cheese and fancy crackers and hummus and carrot sticks too. So simple! So tasty! Try it next year.
